Vanilla Ice Cream

Ingredients:

18 ounces, heavy cream
4 egg yolks
5-1/2 ounces fine granulated sugar
2 tablespoons vanilla extract
1 teaspoon fresh lemon juice

Direction:

Place water in lower pan of double boiler. Allow water to simmer on low heat.
Using a whisk and the upper pan of the double boiler, cream the eggs yolks with 3 tablespoons of heavy cream, sugar, vanilla extract and lemon juice until cream thickens.
Remove upper half of double boiler from lower half and continue to wisk. Add the remaining heavy cream and continue to whip until cream stiffens.
Place vanilla ice cream in refrigerator and allow ice cream to chill. Using a rubber spatula transfer chilled ice cream to your ice cream machine. Freeze according to manufacturer's directions.
Makes 1 quart of vanilla ice cream.
