Strawberry Ice Cream
Ingredients:
5 egg yolks
3 cups heavy cream
1 cup fine granulated sugar
3 tablespoons vanilla extract
1 teaspoon fresh lemon juice
1 pint strawberries, pureed
Direction:
Add water to lower pan of a double boiler. Allow water to simmer over low heat.
Using a whisk and the upper pan of the double boiler, cream the eggs yolks with 5 tablespoons of heavy cream, sugar, vanilla extract and lemon juice until cream thickens.
Remove upper half of double boiler from lower half and continue to wisk. Add the remaining heavy cream, pureed strawberries and continue to whip until cream stiffens.
Place strawberry ice cream in refrigerator and allow ice cream to chill. Using a rubber spatula transfer to ice cream machine and freeze according to manufacturer's directions.
This homemade ice cream recipe makes about 1-1/2 quarts.
