Barbecue seafood martini



Ingredients:

800g fresh king prawns, peeled and tail intact
2 blue swimmer crabs, chopped
500g baby octopus
16 scallops in shell
100ml olive oil
1 clove garlic, crushed
¼ cup chopped lemon thyme
salt and pepper, to taste

martini dressing
60g pitted green olives, chopped coarsely
zest and juice of 1 lemon
30mls citrus flavoured vodka
10ml vermouth
100ml olive oil
1 cup of crushed ice
extra ½ cup pitted green olives

Direction:

Clean and prepare the seafood. Toss olive oil garlic, thyme with mixed seafood.

Season with salt and pepper.

Cook on a heated oiled barbecue plate or grill, over a high heat for 10 minutes or until seafood is just cooked through.

To make martini dressing, place green olives, zest and juice of lemon, vodka, vermouth and olive oil in a cocktail shaker. Shake well, then strain over the cooked seafood and sprinkle with extra olives to garnish.

Garnish with lemon and pepper.
